South Indian broths are delicate. Too little hing and the broth tastes flat; too much or wrong timing and it turns bitter. Getting hing for sambar and rasam right is about using the correct form, adding it off-flame, and respecting the broth’s balance of tamarind, pepper, and fresh herbs.

Which form to choose

  • Compounded powder (perungayam) is reliable and quick.

  • Granules are fine but demand a few extra seconds in hot fat.

  • Raw resin is traditional in some homes; measure with a very tiny spoon.

Exact add-time and order

Sambar

  1. Heat ghee/sesame oil; pop mustard seeds and fenugreek.

  2. Reduce heat, go off-flame, add a pinch of hing; swirl for 10–15 seconds.

  3. Add onions/curry leaves; then sambar powder and cooked dal.
    This order yields a round, savoury base without harshness.

Rasam

  1. Temper mustard, cumin, and pepper in hot ghee.

  2. Go off-flame, add a very small pinch of hing, swirl briefly.

  3. Pour over hot rasam; finish with coriander. The bloom should whisper, not shout.

Dosing that works at home

  • Family pot sambar: ⅛–¼ tsp compounded hing.

  • Rasam: a tiny pinch—overdoing it overwrites the pepper-cumin profile.

Regional tweaks and pairings

  • Mysuru-style sambar: hing with a touch of jaggery for roundness.

  • Tamil rasam: hing with pepper-jeera powder; finish with ghee for lift.

  • Udupi sambar: roast coconut, add a restrained hing bloom to keep sweetness balanced.

Troubleshooting flavour

  • Bitterness: oil too hot or hing added on flame. Repeat off-flame.

  • Weak aroma: fat too cool or old jar. Increase contact by 10 seconds or replace the jar.

  • Over-sulphury: reduce dose by 25% and pair with fresh lemon or coriander.

Both. Ghee adds roundness; sesame oil is classic for Tamil homes.

Can I add hing into sambar powder?
Yes, but still do a tiny final bloom for best aroma.
